Cookie Day on the Farm, oh YEAH! :-)

Yesterday I cruised a lot of blogs.. it was that kind of day, just taking it easy.  On one of them this lovely lady was baking cookies for her husband who'd been away.  Lucky guy, huh?  Walking into a home to the aroma of fresh-baked cookies by his beloved.  I've been hankering to bake homemade cookies for quite some time, my daughter and I made them all the time as the kids grew up.  So, today was the day.  I got all the ingredients out and measured everything into little bowls I got at Christmas.  All except that we were out of brown sugar.  DEAR husband made the run to the store so I could finish the project. :-)
The recipe was from hubby's sister Darlene.. "Cowboy Cookies".   I have added the recipe to share at the bottom.. the new name of the recipe is "Teresa's Cowboy Cookies". :-)
I added pecan pieces and dried cranberries to the recipe to make it "mine".
See the fresh brown eggs and one mint green one? They're from our own hens, the green one is from our Ameracauna named Betsy Ross, the others are from our Buff Orpington and Rhode Island Red.  The butter is the real deal and the vanilla is special stuff from Mexico, I also have some from Tahiti.
The first batch of 3 - makes 3 dozen cookies - or a bit less for bigger cookies.
I was really happy the way they came out, not too sweet at all and the cranberries are wonderful in them!
 


Below is a fun shot of the Granny Stripe blanket I'm crocheting.. it's on my lap, doesn't it look like a colorful mountain valley or dessert sand drifts? LOL
Our youngest son is bringing our 2 littlest grandsons over to visit tomorrow and I cant wait to spoil them with some fresh baked cookies.

Teresa's Cowboy Cookies

1 Cup Butter
1 Cup Sugar
1 Cup Brown Sugar
1 teaspoon Real Vanilla
2 Eggs

2 Cups Flour
2 Cups Rolled Oats
1 teaspoon Baking Soda
1/2 teaspoon Baking Powder

1 package semi-sweet chocolate chips (2 cups)
1 cup broken pecans (optional)
1 cup raisins or dried cranberries (optional)

Beat butter, then add sugars and beat together, adding vanilla then eggs one at a time.  Beat well together, then add dry ingredients, blend well.  Add chips and nuts last. Put on greased baking sheet in walnut sized balls and bake at 350 degrees for 12-14 minutes until light brown.  Do not overbake.  Makes 3 doz.

  11. i was introduced to these wonderful cookies while i lived in texas, and they have been a favorite ever since, think i'll have to make some myself this weekend. oh, and now you have me thinking about valentines day too!
