New Lamb, Egg Holder & Crochet Cloth

Hello!  Have any bunnies hopped into your house this week? :-)  I was over visiting Helen's blog and saw she had some cute cotton eggs in an egg holder and a lightbulb went off over my head and I remembered that I wanted to use my wooden egg holder to put my crocheted eggs in amidst my Easter decorations.  So I hopped up and put the eggs in it and it looks so cute!  


I just love Easter decorations!


Have you tried crocheting Easter eggs?  They are fun and fast.


Here is my new lamb.. I got it in Berlin, OH in Amish country in a gift shop.  I've seen lots of white lambs but never a brown one, it was one of the few souvenirs I got from my trip there, the others are my basket and some hand-dipped candles.  Meredith -- my lamb is saying hello to Baa Baa.. and Gracie -- he's waving to your baby lambs.  :-)


My small orchid is still blooming so beautifully!!

I finished the dishcloth I saw on Pammy Sue's blog.  I'm trying another cloth design now but it's not looking so good so far.  We'll see.  By the way, I have a correction from my last blog post -- the yarn was a gift from Betsy!



While I was visiting my daughter Amy, she made these healthy muffins for our breakfast, she gave me the recipe and I made them day before yesterday.  What a great way to start the day!  They have oats, applesauce, wheat flour, cinnamon, vanilla, eggs, milk, etc.

Healthy Applesauce Oat Muffins

Yield: Makes 12 muffins. You can double this recipe because they freeze so well!

Ingredients
               1 cup rolled/old-fashioned oats
               1 cup unsweetened applesauce
               1/2 cup milk
               1 large egg
               1 teaspoon vanilla
               4 tablespoons butter or coconut oil, melted
               1/3 cup sugar
               3/4 cup whole wheat flour
               1 teaspoon baking powder
               1/2 teaspoon baking soda
               1 teaspoon cinnamon
               1/4 teaspoon salt
               1/2 cup dried cranberries or raisins, optional

Directions
1.           Preheat the oven to 375 degrees F. Line a 12-cup muffin tin with liners or grease the muffin cups. Set aside..
2.           In a medium bowl, stir together the oatmeal, applesauce, milk, egg, vanilla, butter and sugar. Set aside.
3.           In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt (and cranberries or raisins if using). Make a well in the center and pour in the applesauce mixture. Stir until just combined (don't overmix or the muffins will be dense and dry). The muffin batter texture might be a bit different (wetter?) than other muffin batters but no fear, carry on!
4.           Distribute the batter evenly among the 12 muffin cups. Bake for 15-20 minutes until a toothpick inserted in the center comes out clean. Don't overbake or the muffins will be dry.


Remove the muffins to a rack to cool completely. Once cool, place 6-9 muffins in a large freezer Ziploc bag and seal the bag, then freeze.

  2. When I saw your name pop up in my sidebar indicating you had just updated, I came over as quick as I could. I was so hoping you had gotten up in the wee hours (like I did) and got some of your great pictures of the lunar eclipse (like I didn't). My pictures are pathetic and not worth looking at. The moon is tiny and all blurry. I was so disappointed in them! I had set my alarm for 2:35 a.m. The blood moon was neat to see it in person, but I may has well have not taken any pictures. Did you happen to get any??

  6. I think your Easter decorations are so happy and springlike Teresa. Do you have a pattern for the eggs? I wonder if your lamb knows Baa Baa and the babies at Gracie's house? It sure is a tight knit, (knit-get it?), group of sheep. :-). I just know you had fun at your girls luncheon.

  7. Teresa -- this is a first time on your blog and I was delighted with your different presentations -- from grandchildren, to home life, to Ohio and your food and crafts. Most of all I was awestruck by your location near the Columbia. I am playing the role of a discover when it comes to the Columbia River area. I lived in Oregon many years ago around the Corvallis area. But I am a Midwestern from birth. Your trip to Ohio brought back many memories of my travels through that area.   8. The holder for your crocheted eggs is a great idea. They are so sweet. I have been crocheting dishcloths like crazy over the break. Quick and easy. Just what I like. I don't do dairy, but that recipe could definitely be made vegan and would be just as good.   12. Your Easter table setting is really cute and I love those little eggs. I was also inspired by Pammy Sue's dishcloths but haven't had time for much crochet lately. Only a few days till my DDs wedding and then hopefully things will settle down a bit. xox

  18. Right Teresa me and you need words! Almost every blog of yours I am reading is making my tummy grumble. It is so full of deliciousness, whether your own doing or your fabulous meals out! I crave good food everytime I visit ;)
    I am loving everyones Easter enthusiasm, it is making me wish I had got started and in the mood a lot sooner and made some. Yours are so bright and I love them. They really do make me think of Spring and I have to admit I might have to join in. I am a little jealous of your little bunnies and lambs, they are adorable.   21. Your Easter decorations look so festive and bright. All the pretty cheerful colors, so eye-pleasing to look at. The egg holder is the perfect place to display the crocheted eggs. The little Amish sheep is too cute. He is perfect among the bunnies. Love the dishcloth, but most of all I love the color. My very favorite color is blue. Thank you for sharing the muffin recipe. I will have to make a note and remember to try that some day. I have never crocheted any Easter eggs, but if I recall, somewhere you posted instructions? I have made soft little round balls for my grandson to play with. They were in the gift basket at the baby shower we had for my daughter. They too were fast and fun and they were the perfect gift for a new baby or toddler. Hope all is well.
