Tads, Eastmoreland & Raspberries

What a busy week!  My friend Mickey and I met in DAR and she moved a few years ago to South Carolina, and was going to be in Portland for a while, so we met for dinner at Tad's Chicken 'n Dumplins.  It was fun to watch people floating down the Sandy River on inner tubes while we chatted away.  I had a shrimp salad.  I would have loved some fish and chips, but we've stayed away from fried foods for 2 months.  I'm on a plateau right now as we transition from prepared lo-cal to home made fresh healthy food.  But we are sticking with the healthy fresh food regimen!
Yesterday our Portland Chapter of the Daughters of the American Revolution (DAR) met for lunch at the Eastmoreland Golf Club.  We are looking for a new place to hold our monthly luncheon meetings.  Someone said.. "Look, a DEER!!" and I grabbed my camera and ran to the door to snap this photo.  How cool is that?
This will be our meeting room.. I love the soaring beamed ceiling, and the big windows with lots of light.
Lovely groomed golf course grounds. 
The building is very historic and beautiful.  The course was laid out in 1917 and is one of the top rated public golf courses in the country.
I tried to get in all into one shot. 
I love the rose borders. 
After the meeting, where I'm happy to say we decided to move our meetings here for the next year.. I went swimming for my hour and then arrived home to this!  Dayle had visited two local raspberry farms and picked a lot of yummy berries to make freezer jam with.  Raspberries are very delicate, so fresh picked is the best. 
Then he made the jam.  Our grandchildren love our raspberry freezer jam!  It's Dayle's favorite, too.  We use Sure-Jell pectin, you just wash the berries, drain the water off, crush them with a potato masher, measure out the sugar into a bowl, stir the mashed berries into the sugar, add the pectin into a saucepan with some water and boil it for one minute, then stir that into the berries for 3 minutes and VOILA! it's done!
He even strained some seeds out of some especially for me.  :-) 
Our daughter and two granddaughters arrive late Tuesday evening.  We will be busy over the next few days getting everything ready for their arrival.  I'm so excited!  Thanks for visiting.. do you have fun plans for the weekend?  ((hugs)), Teresa :-)

  1. You and I are on the same wave length right now as I just finish posting. I am wondering if that jam could be made with agave nectar instead of sugar? What do you think? I am also on no fried food, no sugar, no corn, no chips...a big wah! (inserted here), and just eating really healthy. I feel better and my stomach does not bother me now that I have eliminated the corn and fried food. So hang in there my friends and get ready for all those girl hugs.

    1. You can use agave syrup.
      Since pectin has dextrose in it (corn),
      you can make raspberry jam/jelly without it.
      Softer set plus more boiling time.
      I found guidelines via Northwest Edible Life which referenced the National Center For Home Food Preservation.

      Basically 1 cup crushed fruit to 1 cup sugar. Boil until candy thermometer reaches 220'.
      Mine took about 10 minutes to boil up to 220'.

    Loved the photos of the raspberry jam (yum) and the historic building (gorgeous) and -- of course -- the deer with the golfers in the background (LOL)!

  5. What a fun place to eat lunch. It looks so cozy and relaxing. It would be so nice to sit and watch the river go by while visiting with a friend. That's a beautiful place for your DAR meetings. Wow!...what a nice surprise to come home to... Those berries look amazing and the freezer jam looks so delicious! Yum!

  6. I am just so excited for you Teresa. Your girls will be here before you know it. As I said before, I would like to borrow Dayle to make me some jam! It looks good enough to eat right out of the computer! :-)
    Dennis counted over 50 deer on his way in from the lake to work yesterday. Usually there are a few, but when he saw so many, he started counting.

  7. If I had a mirror handy I would surely be green, green with envy cause you are always up to something fun, lol. The view of the river would be so relaxing, the raspberries are one of my favorite and just aren't they so darn pretty to look at too. Oh Grandma, I bet you are going to have so much fun when your little girls arrive. Charge up the batteries to the camera......and the building for your DAR meetings is perfect. How lovely it is!

  8. You have found a beautiful spot for your DAR meetings! The rose boarders are lush, the meeting room is full of wonderful light and the photo of the deer playing golf :-) is great!! So glad you had a good visit and meal at Tad's and got to come home to Dayle's yummy looking raspberry jam!!! Katie leaves for Nebraska early Sunday morning :-( Her visit has been fun, but flown by. I am praying you will be able to savor every bit of your visit with Amy and your grand girls and that you will make lots of good memories. xx, Gracie

  10. That's a beautiful golf course. Love the building! Deer are a common site around here too. We have many wandering through our property. They are so fun to watch...especially the babies. Those raspberries are making my mouth water! Ours aren't quite ready yet but soon. Hope you have a wonderful time with your daughter and granddaughters!! :D

    I love raspberries and the jam looks delish. How excited you both must be now that it is almost time for your daughter & granddaughters to arrive.
    I have not done a lot today ( Sun) On Friday I was in Windsor & yesterday at Buckingham Palace for The Coronation Festival. Had two very hot but brilliant days with three other ladies. Hugs Anne x

She is the older sister of my Mom's friend Dan. She is Marjorie, and she is an artist. I told her of you, my friend in Oregon, who is so gifted with her drawing. I got Margie signed up on apple with an ID so she could purchase the Draw Something App. She is a delightful lady of 88 years young, and she was so much fun to get to know!
    I saw your previous post of your lunch with Gracie and her sister. How much fun you must all have. I loved your table setting, and Dayle's salmon....oh my!!!
    I am so thrilled, beyond words, for your daughter and grandgirls arrival tomorrow. Enjoy every wonderful moment.
