Sheet Pan Suppers and a Surprise from Susanne

Hi there!  My DIL Kristi loves to cook and picks up new cookbooks often.  She made this dinner from a new cookbook called "Sheet Pan Suppers" - and it was so good!  It's also very colorful and healthy.  This recipe is called "Roasted Arctic Char & Asparagus with Pistachio Gremolata".  She used Travis' salmon that he caught a few months ago instead of char.


I loved how the flavors were so fresh - and the salty crunch of the pistachios on top was great. 


The salmon and asparagus were perfectly done.


I thought I'd show you the book in case you were interested.  (This is not a commercial... just sharing something I think is neat.)


I received a box yesterday and it was from my blog friend Susanne at Forget-Me-Not.  What a neat surprise!  She'd seen this cookie jar and thought of Buddy and so got it and a box of dog biscuits to put inside.  LOL!  I love it!  Thanks, Susanne!  Buddy says "woofie thank you"!


I'm glad to report that the ripple afghan is in route to my niece and a pair of pink booties are in the air to Texas to my cousin's daughter's first baby.  I have one more blue bootie to make and another pair of pink ones.  Then I'm on to other WIPs and UFOs.  :-)  I head off to swim soon.  I hope you're having a good week!  ((hugs)), Teresa :-)

  1. I have that cookbook. So many good recipes! Try the roasted radishes, and make sure you dip them in SALTED butter. Amazingly delicious!

  8. That cookie jar looks just like Buddy! What a thoughtful gift. And your dinner! Oh. My. Goodness. Delicious looking. I've been hearing more about sheet pan meals. May be something to try on a scaled down version for us. Good work on all of the gifts.

    We use those mini Milkbones for Alfie. Helps him keep his youthful figure. ;)
