A Good Weekend

We had a very nice Father's Day weekend.  On Saturday I worked on the newsletter for the Friends of Multnomah Falls and Dayle busied himself with mowing the yard and getting the attic tidied up.  We are getting it ready for our granddaughter's visit next week.  We ordered two new rollaway beds for them, new sheets and new soft blankets.  After dinner out we came home and I captured this sunset over the lavender farm across the road.


We noticed a sign for a pizza restaurant in Troutdale the other day and decided to give it a try.  It's called "The Way Out Inn".  It was delicious and we'll definitely be going back again.  You design your own pizza, we had half sausage, bacon, mushroom and black olive and half Canadian Bacon and pineapple.

Yesterday we had a lovely Father's Day.  Our son Travis, his wife Kristi and boys Hayden and Caleb came for the afternoon and evening.  Travis made home-made macaroni and cheese using our family recipe - it's SO delicious!  (Recipe at the bottom of this post)


Hayden came in from the barn and asked if he could use my phone, sure.. why?  He wanted to take a photo of some young birds in a nest in the barn.  I have no idea what kind of birds these are.



We sat outside and visited.. Caleb loves to make faces during my photos. :-)

TERESA'S HOMEMADE MACARONI AND CHEESE WITH PEAS

Preheat oven at 350 degrees

24 oz macaroni
6 TBS Butter
5 TBS Flour
1/2 tsp salt
4 Cups milk
1 1/2 lbs Velveeta
1 Can baby peas, drained
Sliced Tillamook Cheddar for the top

Get the water to boiling - like 3 quarts, with 2 tsp of salt and with a dash of oil.

While it's coming to a boil, melt butter in saucepan and add flour and salt - stir until blended and cook for a minute or two, then add the milk and stir until slightly thickened - it won't thicken much.  Add sliced Velveeta and stir until blended, add drained peas and stir in.  When the water came to a boil you added the pasta and stir often - check OFTEN to see if the pasta is done "al dente" which means done but chewy, (never ever overcook pasta, it turns to mush and is horrible).  When the pasta is cooked, drain in a colander.  Toss till well drained, then add to cheese mixture in a oven proof baking pot - stir well, sprinkle with pepper and stir again.  Then lay cheddar slices over the top.


Bake for a half hour or up to 3 quarters of an hour until slightly browned on top and bubbly.

  2. Being pescatarian/vegetarian I like my pizza loaded with vegetables ~ mushrooms, olives, onions, green & red bell peppers on a thick chewy, well baked crust. Man, just thinking about it makes my mouth water!
    Our week end was nice and quiet, just the way we like it.
    Today, I'm making a few project bags for my shop and thinking ahead to the next piece of fabric for bags. It never ends (smile).

  3. Both the pizza and the mac and cheese look wonderful! When we go out for pizza, Pete's half is usually sausage and mushroom, and mine is white pizza with broccoli. But I like it all except pepperoni. What a great picture of those sweet little birds!

  4. My favorite pizza is broccoli, chicken and cheese. We still have eggs in our birdhouse and mama bird is sitting on them so hopefully they will hatch soon. Your mac and cheese recipe sounds delicious!

  5. WOW! Love the picture of the lavender farm AND the pizza. I would love to have the view of that farm from my house. You are a lucky girl my friend.
    We like everything on our pizza except anchovies so we're really easy going when we have pizza with friends. We just tell them to order anything they like and we'll eat it. :-) . Yours looks delicious. We had pizza on Friday night. Dennis stopped and picked it up after work as I wasn't feeling too well. (They were taking me off a medication and my BP sky-rocketed for a few days. Much better now.)
    It was good of Travis and Kristi to come over and make dinner. And thank you for the recipe. I'll be trying it because Dennis really likes mac and cheese, especially homemade. Tillamook cheese has to be the icing on the cake as they say. Tillimook anything is the best!

  6. Gerard is easy going with pizza topping but I can be quite fussy sticking to a margarita or a ham and pineapple. Must admit yours looked delicious. Sounds like a wonderful weekend and a joy to have the boys for a visit, you are blessed that you have family so close.

  7. My favourite (homemade) pizza toppings are leftover roast beef and roast pumpkin sprinkled with pinenuts and feta. I usually add a generous spoonful of chutney (mango around here) to the tomato sauce base and it's amazing. Then again I do love a smoked salmon and camembert or brie topping as well. Now you have made me hungry and upset at myself for being so lazy and not making homemade pizza's in a very, very long time! I love your get together as well. Food and family...it doesn't get much better than that does it? xx Susan

  8. Macaroni and cheese is always a winner in our house. I like mine with crispy small cubes of bacon. We always have the peas separate rather than mixed in :-) I am a fussy pizza eater, it must be my half Italian-ness and prefer one or maximally two toppings. I like capers and anchovies and I am quite fond of spicy Italian salami, too. The pizza you shared with Dayle looks rather delicious. High heat makes for a good pizza. I am so hungry, I am just about to bite my nails. Glad you had a lovely Father's Day weekend with a delicious dinner prepared for you. xx

  9. Pretty sunset! It is fun to see the bird family Hayden got a good photo of. After making baby blankets last Wednesday we stopped to admire the heads of some baby birds peeking over the edge of nest in a bush outside the church. I like the flavor of all kinds of pizza including with anchovies, :) but in recent years I especially like veggie pizza with no sauce or dairy on a gluten free crust...and I think it tastes great...honest :) xxxxxxx

    I can only have no cheese or light cheese on my pizza side. Weight watchers ........maintenance is yucky . I love chicago deep dish pizza, but just the crust. Im a crazy crust lady!

  11. Hi Teresa that sounds like a lovely weekend. Our youngest son and family visited. We had steak on Father's Day. Love pizza though! Not over fussy what's on my pizza :-) Have never eaten Mac/ Cheese.Yours sounds tempting. Hugs Anne x

  12. Veggies only for me, hold the cheese (or make it vegan). Blaze Pizza opened here a while back and they actually have vegan cheese. Haven't actually tried pizza at the locations here but we did have some when we were in Bahrain last summer and it was soooo good. Your grandgirlies are gonna have a very comfy spot for their stay. Enjoy!

  13. Lovely sunset photo. I love ham & pinepple pizza with mozzarella - I usually add mushrooms to just about everything, so I'd likely add those too. In the UK I've not seen peas in macaroni.
    Having read many Debbie Macomber books with lots of 'meals that characters cooked & ate' I've seen food tastes are vastly different to the UK. Saying that the UK has incorporated many new ideas over the years and regularly enjoys worldwide recipes alongside more traditional ones. Cathy x
