I just went out to check on my daffodils.. we've had some crazy hailstorms over the last several days and I was worried they were damaged. They are leaning a bit but seem in one piece. :-)
The big pot where the temple bells plant lives is showing hyacinth, tulip, and some little bulbs I'm not sure of.. lol.
A cloudy grey day.
The chickens had begun to lay then the snow and ice storm upset them and they stopped, all but one.. and now they're coming back.
I really love having our own chickens and fresh eggs that we know are fresh and from happy hens.
We are planning to buy a corned beef for St. Patty's day so I got out my Fanny Farmer Cookbook to see how you prepare them. You actually boil them, then take the meat out and cook the potatoes, onions and cabbage in the hot brine. Any recommendations from cooks who know how to do this?
And here is a good slogan to live by! I've actually been doing some exercising, walking in place, marching, waving my arms around, twisting and turning. I miss swimming so much. I used to go 3 times a week, swimming without stopping for a whole hour. It never made me slim and trim but I know it was good for my heart. When Covid arrived they closed the pool at my gym so eventually I cancelled my membership. I wonder when I'll feel comfortable being amongst a bunch of strangers?
Chef Dayle roasted a beef yesterday, a yummy meal.
I have 3 more colors to add to my Meadow blanket and then I will start the last 15 color segment and will then do the lovely border that Lucy designed.

ReplyDeleteI love that you have your own chickens and are getting your own eggs. Also, glad to hear you are doing some exercising. It is so hard to get motivated isn't it? I did walk again today (a little over 3 miles) and saw turtles and some other stuff - pictures on the blog tomorrow. So glad to hear that Travis continues to improve. I've no doubt with Kristi looking after him!

ReplyDeleteI couldn't wait, and started my corned beef about 30 minutes ago! I boil it until it's about fork tender, then I add a quartered and rinsed cabbage. I like to steam my potatoes separately, because I feel like they don't get as mealy from going directly in the beef water... also, it's nice to keep them out of the brine, so they contrast in flavor with the rest of the meal. I imagine you are going to get lots of good tips, and I'll be back to read, them, too!
Your daffs are beautiful, Teresa! I can't wait for ours to bloom. We've had temps in the 70's and they surely will bloom soon, snow flurries are expected on Monday! Chef Dayle's roast is yummy looking! I'm so happy to hear that Travis is driving. That is really wonderful news. He is on the mend! I've never cooked a corned beef. I'm sure Dayle will do a great job! So sorry your pool is closed. I know how you feel about being around strangers. Weird times, right? My daughter is an open water swimmer and trains in a pool in winter. Hers is closed as well. Keep moving, my friend.

ReplyDeleteI've been walking along with Leslie Samone on YouTube every day and having a lot of fun. It definitely has improved my mood which was pretty dismal before the weather took a turn for the better. I gave up on trying to find a corned beef for The Mister this year so he's having some salmon I have stashed in the freezer instead. When I could find one the prices were outrageous. Hopefully he'll get one next year when we can go back in the stores and look for one ourselves. He's going to be able to set up his appointment tomorrow with the health department for his shot. I'm still waiting for my call.

ReplyDeleteI prefer to cook the cabbage and potatoes separately so everything doesn't taste the same. There is a wonderful Irish recipe called Colcannon which is a mixture of potatoes and cabbage that I've used several time. If you Google it you can see may variations are available.
Daffodils are pretty. Yours,mine and others I've seen. We had a couple heavy showers of rain on Friday when out and about and Sunday when we were at church. I need to do more exercise as I am more at home now. I do go on walks outdoors a few times a week. Losing 8 more lbs is my goal. Take care. ×------× :-)

ReplyDeleteHi. I cook my corned beef and cabbage just how you describe it. While the vegetables are cooking I put the beef in a warm oven with some of the liquid, tented. Add the longest cooking veggies first, ie carrots, the potatoes after a little bit then the cabbage. I personally love the taste of the veggies cooked in the brine.

Dear Teresa, your daffodils are so bright and yellow!! Your Patty's figures look sweet and the lamb is very proud of the eggs. :) Glad Travis is doing well! I finished about 30 color lines of my blanket. I had some nice person giving me a solid new back door, today, so I had to stay home and was able to work on it. It was very cold in the house, there is a big storm blowing around in the low lands and the back door was gone......Having extra coffee now and an extra blanket on my lap! Lots of love, Janneke.
ReplyDeleteOver the last month I have been trying to walk for 20-30 minutes inside frequently, not daily yet, but a few times a week so far. In the past when I have cooked corned beef I have boiled it for a few hours, depending on the size directions printed on the packaging. For the last 45 minutes or so I have added potatoes, carrots, and cabbage. Thanks for sharing photos of your pretty flowers and eggs, too. ((hugs)) ❤️🙏
ReplyDeleteAren't fresh eggs the best?! Glad Travis continues to do well. My Dad always roasted a whole corned beef with a mustard baste. As a kid I didn't like it, but as an adult I love corned beef.
ReplyDeleteHi from New Zealand. I cook corned beef the way my mum did and her grandmother did before her. We put it in a pot with a fitting lid on the stovetop and add water to about 1/3 of the way up the beef. We add a generous slurp of golden syrup on top and a large slug of malt vinegar (I guess white vinegar would do). We cook it on low heat till it's tender, 90 mins to 2 plus hours. In the last 20 -30 mins we add sliced brown (peeled) onions and carrots cut into small sticks. they cook in the water. When you lift the tender beef out to carve, the vegetables can keep cooking. We then make a mustard sauce with a cup of the cooking water. This is the best bit. We serve the sliced, falling apart beef with the carrots and onions, mashed potatoes (cooked separately), and maybe sautéed cabbage and/or peas. This is the sauce:
